It felt like summer outside today – and that got us in the mood to cook like summer! Anyone else?
Don’t you hate it (for those that live in a neighborhood) when someone near you is grilling out dinner and you’re NOT>>>??? You just wanna show up for dinner without being invited, am I right?
Well – tonight, we were those people in the neighborhood smelling good in our own backyard!
That photo totally wasn’t taken today – but, goodness – I sure do love standing at the sink window and watching my man cook for us! I should really admit that I love him smelling like food and charcoal….hahah!!
I went to the store for hamburger meat, but came home with steaks. I figured it was my birthday week and I deserved a special dinner, even if I bought it for myself 🙂
Here is one of our favorite easy side dishes that goes perfect with steaks, chicken or whatever you have on the menu.
Starr’s Roasted Pan Veggies
2 cups of small red and brown potatoes
2 small squash
1 sweet onion
Coconut Spray Oil
First spray a large flat baking sheet with coconut spray oil.
Then, chop your veggies and spread evenly across the pan. Cutting smaller and thinner pieces will allow the veggies to cook faster.
Cover generously with each of the 3 seasonings – Lemon Pepper, Garlic Salt and Italian.
Next, cover the top of the veggies completely with the coconut cooking spray oil. This will really help the seasonings to stick to the veggies.
Pop into the oven for 35-45 minutes on 450 degrees.
This is one of our favorite sides to cook when grilling for dinner. Sometimes we even add in different veggies to mix it up – carrots, zucchini, eggplant, etc.
