Hi friends! Today I’m sharing Brian’s all time favorite dessert that we had a few times over the Christmas season:
No Bake Blueberry Cheesecake!
(2) 8oz packages of Cream Cheese
(1) 8oz Container of Cool Whip1/2 cup of sugar
1/2 tsp vanilla
(1) 1lb5oz can of blueberry pie filling
(1) large graham cracker pie crust
Have the cream cheese and cool whip at room temperature (or just nuke it in the microwave if you’re last minute like me and always forget to do this!). Cream together the sugar, vanilla and cream cheese with a mixer. Beat until creamed well and then mix in the cool whip. Pour into the graham cracker crust. Note: I always have leftovers that won’t fit into the pie – so I put it in another dish to keep at home if we are taking this dessert somewhere else – pictured above 🙂 Pour the blueberries on top (or use any other pie filling of your choice).
It’s best to let it sit for a few hours in the refrigerator before serving.
Waaaaalaaahhh! It’s so yummy. And we’re totally about to tear into this extra dish that has been sitting in the fridge!!
