If you are looking for an old fashioned dessert to make this coming week, here’s the recipe for Glennie the Great’s very own Coconut Pie!

This pie was a staple at grandma’s house every single Christmas. Thankfully, my friend Karen has perfected cooking this pie and we will once again have that coconut pie around the table 🙂

Incase you can’t make out those ingredients, here you go:

1/2 stick of margarine
3/4 cup of sugar
4 tbsp flour
3 eggs3/4 cup buttermilk
1/2 cup sweet milk
2 tsp vanilla
1 cup of coconut (she used Angel Flake)

Mix margarine, sugar, then eggs, then rest of ingredients but the coconut, stir in last.  Pour into unbaked pie shell. Bake about 30-40 min at 325 degrees if pie crust seems to be getting too brown around edges before it gets done, I cut some foil strips and put around the edge of the pie until done.  – Glennie

Note: Grandma would actually split the ingredients above into 2 thinner pies that would cook much easier and brown better than trying to cook 1 thick pie. If you do a thick pie, you will need to adjust the cooking time to be longer.
