#shareitsaturday / my grandma’s coconut pie recipe

If you are looking for an old fashioned dessert to make this coming week, here’s the recipe for Glennie the Great’s very own Coconut Pie!

This pie was a staple at grandma’s house every single Christmas. Thankfully, my friend Karen has perfected cooking this pie and we will once again have that coconut pie around the table πŸ™‚

Incase you can’t make out those ingredients, here you go:

1/2 stick of margarine
3/4 cup of sugar
4 tbsp flour
3 eggs3/4 cup buttermilk
1/2 cup sweet milk
2 tsp vanilla
1 cup of coconut (she used Angel Flake)

Mix margarine, sugar, then eggs, then rest of ingredients but the coconut, stir in last.Β  Pour into unbaked pie shell. Bake about 30-40 min at 325 degrees if pie crust seems to be getting too brown around edges before it gets done, I cut some foil strips and put around the edge of the pie until done.Β  – Glennie

Note: Grandma would actually split the ingredients above into 2 thinner pies that would cook much easier and brown better than trying to cook 1 thick pie. If you do a thick pie, you will need to adjust the cooking time to be longer.

Enjoy some coconut yumminess!

PS – today is this mini-me’s birthday and I had to share πŸ™‚
